Palm Pizza in the Press

  • Food & Wine: Chef's Pick

Palm Pizza is the casual cousin of beloved Neapolitan pizzeria Bufalina, serving New York-style slices and thick square pizza in East Austin. Owner Steven Dilley recruited Grae Nonas to revamp the Bufalina menu in 2022, and the pair began plotting to open Dilley’s second dream of a New York pizzeria. Nonas, Dilley, and Bufalina wine director Rania Zayyat ate pounds of pizza until they crafted the perfect dough for Palm Pizza, which opened in 2023 (Nonas left the restaurant in 2024).
